being green~greening up your summer vacations

As we plan our summer getaways, going green is not often on the ”to do” list.  Here’s a helpful guide of tips to consider before you finalize those vacation plans!

Things to consider before you go: 
How about a “staycation”?
We don’t usually think about staying home as a vacation, but there are probably several ways to have a family adventure locally.  Go camping at a local campground, go to the lake, visit the local zoo, go hiking or rafting, or visit local landmarks and museums.  You can be as active and adventurous as you want to be.  Staying close to home may be the greenest way to spend your vacation and you just may discover things about your local area that you did not know!

Volunteer for your vacation
There are many organization and destinations that need volunteers to help with nature conservation efforts.  By planning this type of vacation, you will get to see many beautiful places in the world and you’ll have the opportunity to help keep them that way.

Plan to stay in green hotels
When choosing the hotel for your vacation, find one that follows green practices.  Use Travelocity’s Green Directory to make it easy for you find accommodations all over the world that have been verified as eco-friendly.

Use carbon offsets to reduce the impact of your trip
Carbon offsets is essentially paying money which goes towards funding projects that reduce our emissions of carbon and other greenhouse gases.  While carbon offsets won’t stop climate change, it can help increase awareness of the emissions problems we have and help fund projects to reduce them.

Take the train
Taking a train to your destination can be a vacation unto itself.  You will see so much more of the country than what you would if you fly, and you get the benefit of utilizing one of the greenest forms of transportation available.

Pack light
Not only will packing light be better for your back, it will also reduce the amount of energy necessary to get your where you are going.  The heavier the luggage in the trunk of the car or the belly of the plane, the more fuel is needed to get to your destination.

Don’t forget to unplug your appliances before you leave
These days, nearly every household appliance draws a little bit of power even when they are turned off. 

Be green once you get there:

If you are renting a car, go with a hybrid when possible
Hybrid vehicles are becoming more common at rental companies.  Walk, rent a bicycle, or take public transportation

Eat locally
Seek out local restaurants that source their foods from local farmers.  You will get better tasting, fresher food and you’ll be supporting the environment at the same time.

Buy local souvenirs
Buying keepsakes from local artists and businesses who have local products will give you something that is truly reminiscent of your vacation destination.  But buying locally also supports a reduction of emissions because you aren’t purchasing an airbrushed t-shirt that shipped from some far away location.

meal ideas~ Chilled Shrimp with Cabbage & Peanuts, Vietnamese-Style

This Vietnamese-inspired shrimp salad is perfect if you’re looking for something different to bring to a summer potluck or a light dish for warm-weather entertaining at home. This recipe calls for Asian hot chili sauce. The different styles and brands of sauce have varying heat levels, so taste as you go.

12 ounces cold cooked and peeled small shrimp
1/2 small head Chinese or napa cabbage
20 sprigs fresh cilantro, divided
1 small head Boston lettuce
1/3 cup rice vinegar
3 tablespoons peanut oil
2 tablespoons fish sauce 
2 tablespoons Asian chile sauce, such as Sriracha
1 tablespoon sugar
1 teaspoon finely chopped fresh ginger
1 small carrot, peeled and shredded
1/2 cup roasted unsalted peanuts, coarsely chopped, divided

Pick over shrimp, discarding any pieces of shell. Cover and keep chilled until ready to toss the salad.
Slice cabbage into very thin strips, about 1 to 2 inches long, to get 5 to 6 cups. Slice 12 cilantro sprigs (stems and leaves) very thin; reserve remaining sprigs for garnish. Separate and wash lettuce leaves. Keep everything chilled until ready to toss the salad.

Mix vinegar, peanut oil, fish sauce, chile sauce, sugar and ginger in a small bowl. Keep at room temperature for up to 2 hours, or cover and refrigerate if making ahead; let cold dressing come to room temperature before tossing with the salad.

Just before serving, toss the reserved shrimp, cabbage, sliced cilantro, carrot and 6 tablespoons chopped peanuts with the dressing in a large bowl. Arrange the reserved lettuce leaves on a serving platter or in a large, shallow serving bowl. Mound the salad on the lettuce and garnish with the remaining 2 tablespoons peanuts and 8 cilantro sprigs.

Make Ahead Tip: Cover and refrigerate the shrimp, salad and dressing in separate containers for up to 1 day. Bring dressing to room temperature before tossing with shrimp and salad.

healthy living ~Stay Healthy During the Summer

      Welcome June 21st, first day of summer ~ summer solstice.  Today is the official beginning of the summer season.  With this new onset of the summer season comes many health concerns that you should be aware of before you plan your summer activities. The heat and sun can lead to many serious illnesses and accidents. Make sure you start your summer off right by knowing how to keep you and your family happy and healthy during this fun time of year!  Staying healthy during the summer months requires more than just eating the right foods. Below is a partial list of things to do that will help you stay cool and healthy during the hot summer months.
  • Drink plenty of water. It is very important to drink water. Your body needs water to prevent dehydration during warm summer days. Take special care to make sure infants and toddlers drink enough water. They can become dehydrated much more easily than adults.
  • If you have asthma or other respiratory problems, keep a careful watch on the daily air quality reports. Also, don't forget to take your inhaler or other medication with you when you go out.
  • Take a rest or nap. Don't push yourself beyond your physical limits.
  • Wear Sunscreen. Sunburn is painful and unhealthy. Use a sunscreen that is right for your skin.
  • Stay Cool. Wear light, loose-fitting clothing to help you stay cooler.
  • Wear Sunglasses. Sunglasses protect your eyes from the sun's UV rays.
  • Maintain your energy level by limiting your intake of fat and sugar; focus on carbohydrates, fruits and vegetables.
  • Before leaving for vacation pack a few items (calamine lotion, baking soda) that will help with itchy or painful insect bites.
  • If you have allergies and plan to be traveling/vacationing, find out which plants will be pollinating in your vacation spot
  • Know your body. If you are feeling ill, see a doctor. An average of 400 people die each year in the United States due to extreme heat.

summer memories

When I came across this photo it instantly reminded me of my childhood days spent lying in a summer's meadow among the wildflowers; watching clouds float past as I found all the shapes hidden within their fluffy depths. 

Our memories of summer are often intense because it is a season blessed with a vividness unsurpassed by any other time of year. Our senses are delighted by bright colors, fresh scents, vibrant flavors, brilliant sunlight, and heat's caress. There is a luxuriousness about summertime, as both flora and fauna come into their own, regaling us with natural beauty. 

Our day-to-day circumstances may not change as spring turns into summer, yet we nonetheless feel refreshed. Our burdens seem lighter, and we feel compelled to play, to travel, to relax, and to experience all of life's joys to their full extent during extended sunlit hours.

Rituals specific to the summer season empower us to attune ourselves to the changes that take place in nature and within ourselves as the weather grows warmer. Some summertime rituals are highly personal—remnants of past traditions we have unconsciously preserved through practice. Others can be incorporated into our lives whenever we feel the need to experience summer's significance on a deeper level. Summer is at its core a season of light, and by opening ourselves and our spaces to this light, we honor all the joy associated with the coming months. Unbolting windows and doors, arranging bright-golden blooms in a vase, and turning our faces toward the sun become a celebration when done with intent. Summer is also a wonderful time to practice focused listening, as the air is filled with beautiful sounds particular to the season. To begin, find a quiet, solitary spot. For 10 minutes, pay attention to the workings of your mind and allow it to wander at will. Then turn your attention to the sounds resonating around you and note what you hear, whether the buzzing of bees, children's laughter, or birdsong.

Thoughts of summer likely evoke numerous pleasant images in your mind. However, if what you envision seems little more than a piece of your distant past, you can reacquaint yourself with the joys of summertime by immersing yourself in its pleasures. Wake up with the sunrise, take a day trip to the beach, indulge in an ice cream cone, or simply sit quietly in nature's embrace. The season will pass quickly, but while it remains, you can revel in the richness of life and renew yourself in the wonder of the light.

being green~ repurposing that gallon bottle

Milk, laundry detergent, bleach bottles are a basic in almost every home. But what can you do with them beyond the laundry room or kitchen? More than you've ever imagined! Before you throw that empty bottle into the recycling bin, stop to consider what other lives it may have. You can reuse bottles in craft projects. Some of the items you can create from an ordinary bottle are useful around the house while others are just for fun. 
1. Scoop it Up The heavy plastic in most detergent and bleach bottles is ideal for making an inexpensive scoop. Cut diagonally across the middle of an empty, clean bottle and use the half with the handle to scoop up fertilizer, potting soil, rock salt, pet waste or to use as a dust pan.

2. Use Bottles to Store Bird Seed I rinse out my detergent bottles really well and let them dry for several days. Then pour in birdseed. The pouring spout is great for filling feeders. No more birdseed weeds on the ground.

3. Weight it Down Bottles filled with sand or water can be used to hold down a tarp, portable sports equipment like a pitching net or basketball hoop. Keep a couple of bottles filled with sand or rock salt in the trunk of your car during winter months for the weight and deicing.

4. Fill It Up Cut off the tops of bottles to create a funnel for all those messy jobs like transferring paint, filling the lawn mower or changing the car's oil.

5. In the Garage  For large bottles, cut a hole in the side leaving on the handle and use it as a tool caddy. Smaller bottles, cut the same way, are great for separating and holding nails, screws and other small pieces. You can even label the outside for quick access.

6. Clear the Way  Store rock salt in a clean and thoroughly dried bottle, tightly capped. When the storm hits, you can hold it by the handle and sprinkle away without taking off your gloves.

7. Create Sturdy Templates  If you enjoy crafting, you know that each time you use a paper template it changes size just a bit. You can make plastic templates from laundry bottles that can be used many times. Simply cut of the top and bottom of the bottle and slit the remaining circle of plastic so it can lie flat. Mark template with permanent marker and cut it out to use over and over again.

8. Water sprinkler  most any size bottle can be made into a gentle sprinkler for watering plants. Rinse the bottle thoroughly and dry well. Use an ice pick or awl to punch holes in the lid. Fill the bottle with water, tighten on the cap and sprinkle away.

9. Drip Irrigation  If you want to apply a slow, steady supply of water to a plant, use a detergent bottle to create drip irrigation. Wash out the bottle thoroughly, use a pin or very small nail to punch several holes in the bottom. Fill the bottle and set next to the plant. This is particularly helpful for tender plants if you are going to be away for a day or so.

10. Crafts for the Kids From piggy banks to Halloween and Christmas decorations, the laundry room offers plenty of creative materials. Make a ball catcher. Cut the bottom off the bottle, then cut a U shape under the handle. Make two ball catchers so that children can play catch.

11. See your garden grow  Slice the bottom off an empty, clean jug to make a miniature greenhouse for seedlings. (Place the bottle open-side down over the plants.)

12. Keep them afloat: Tie empty bottles together to use as buoys or to mark the deep part of a swimming area.

meal ideas ~ the cherries are here…the cherries are here

I love cherries, can eat them all day. Cherries are more popularly known as "super fruit" due to the large number of health benefits that can be obtained from them. These tasty small fruits contain a number of elements that provide nutritional benefits. They are low in calories and high in antioxidants. They also have a very short season-so get them now!

I use a homemade Cherry Pie Filling when they are in season. After making homemade cherry pie filling you will realize how tasteless the store-variety really is, and how easy the homemade is to make.

Homemade Cherry Pie filling
2/3 cup sugar
1/4 cup cornstarch
1/4 teaspoon salt
4 cups fresh cherries, pitted
1-1/2 cups water
2 tablespoons lemon juice
6 drops red food coloring, optional

In a large saucepan, combine the sugar, cornstarch and salt. Add the cherries, water and lemon juice. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in food coloring if desired. Yield: 4 cups.
**note: you can use Tart Cherries, just adjust the sugar to your taste- 
      I would start with 3/4 c.


1/2 cup brown sugar
1-1/2 cup + 2 TBS flour
1/2 cup + 2 TBS butter
1/4 cup chopped nuts (walnut, pecans, any you like)
2 eggs
1 cup sugar
1-1/2 tsp baking powder
1/4 tsp salt
1/2 cup milk
1 portion cherry pie filling –homemade or canned

PREHEAT oven to 350 degrees. Grease 9x9 inch baking pan.

Mix the brown sugar, 2 tablespoons flour, 2 tablespoons butter and nuts together for the topping and set aside.

Beat eggs until fluffy and thick, add white sugar gradually, beating well. Add remaining melted and cooled butter. Shift flour with dry ingredients, add alternately with milk; mix well.

Pour 1/2 of the batter into the prepared baking pan and add the cherry pie filling. Dribble remaining batter over the cherries and sprinkle with the topping. Bake for 45 minutes.

healthy living ~ hand cream recipe

Hand cream recipe - this comes from one of my all-time favorite books, Organic Body Care Recipes. It is easy to make and leaves your skin soft without feeling greasy.  Since finding this recipe, I don’t buy commercial lotions. It's simply that wonderful. 

This hand cream recipe also makes an excellent gift. You can order containers that are perfect for these lotions and give them as gifts. They are luxurious gifts that are easy on the budget.

I apply this hand cream on my hands after doing chores, especially after dishes, and it keeps them from cracking and getting those awful peelies. The combination of cocoa butter and essential oils give it a slight spicy scent.

1 tablespoon cocoa butter
2 tablespoons beeswax
1/4 cup organic coconut oil
1/2 cup plus 1 tablespoon almond or apricot kernel oil

I also add:
20 drops (any combination of) peppermint, geranium, lemon, or grapefruit essential oil
Using a double boiler, warm the cocoa butter, beeswax, coconut oil and almond or apricot kernel oil until melted. The beeswax will be the last to melt.

Remove from heat and allow the mixture to cool for five minutes, and then add the essential oils. Continue stirring until the mixture becomes opaque but can still be poured. Pour it into a container and allow it to cool overnight, cocoa butter takes a while to set-up, at least 12 hours. This recipe makes about one cup of hand cream. No refrigeration required, for maximum freshness use within one year.

For those dry calloused hands… try combining

½ c. olive oil
1 c. kosher salt or sugar

Stir well and rub into hands and cuticles for 30 seconds to 1 minute. Rinse with warm water. The granules gently yet effectively slough away dull, flaky skin to reveal a fresh, hydrated layer of skin.  Smooth on your favorite lotion… like the one above.

what are those wild babies doing…?

It has been a while since I last updated everyone on those beautiful “wild babies.”

Lily, Hope and Little Faith~

      These three are doing great! Faith is learning to be a big bear and Hope has found an extra year with her mother, as well as learning about being a mom herself with taking care of Faith along with Lily. Here are a couple of pictures (of course I have tons of new ones) but these are some favorites.

The Hornby eaglets- Alexandria & David~

Wow, have these two grown in the last 6 weeks.  Alexandria and David have lost most of their chick down feathers with only a little peeking through. Also, I included some funny shots of a couple of weeks ago. Look at those huge feet! David is biting at her toes. Alexandria loves to sleep next to the camera and chew on that stick. 

Falcons at Pittsburgh University

Dorothy and E2 have done it again; a successful nesting year with four new falcons on the horizons. The falconets have fledged. Here is a picture of how they looked just before learning to take flight, E2 on the ledge; and of course after that I lost visual of them. However, fret not, there is a wonderful woman at the university that has a “bird watching blog” that was able to get some terrific pictures of E2 teaching the young ones how it is done.

being green~ my sources for ideas

Someone asked me where I get my 're-purposing" and "green" ideas. Do I have a book(s) or are they invented? For the most part they are just common sense ideas. Sometimes I see something and ponder for a while, what second life thing can we do with this and then have that 'flash' of genius; sometimes it never comes, such as a little plastic holder we have at work that the pedialyte bottles come in. (one day it will come.)

My favorite book is a powerful book that I use which contains a lot of ideas for being and staying green.  It is only 5" X 7" a great gift idea for anyone.

It’s Easy Being Green- a handbook for Earth-Friendly living --$9.00

meal ideas ~ stuffed tilapia

Tilapia has to be one of my favorite fish. The first time I ever tasted it was in Kenya, Africa. It was wonderful; a solid fish with a nutty taste. Sadly, the tilapia that we get here in the United States is farmed in our waters or from the Philippines, and is lacking in that “nutty” quality. The African waters where the tilapia comes from have a super high PH level- very alkaline, which is what gives the tilapia its taste; nevertheless, farmed raised, it still has a great taste and texture. We love to stuff it whole, wrap in foil, and cook on the barbeque. (yes-yes, I know…omg she’s using aluminum foil- one of the rare occasions) You can also wrap it in parchment and bake in the oven (425 deg.) for about the same amount of time- the skin will be moister but the flavor will be the same. 

1 whole Tilapia, whatever size you  need, per person.

Lightly coat sheet of aluminum foil with olive oil, or canola oil and sprinkle with garlic powder.  Place stuffed tilapia onto half of foil folding over the other side, secure around the edges.  Place on barbeque med-high heat for 10 minutes- flip over and continue cooking for another 10 minutes. (trust me this is enough) 20 minutes total. Remove from foil pouch when cooked and enjoy. The other nice thing about tilapia is that its bones are large and can easily be seen and removed while eating. My husband likes using chop sticks to help pull out the bones.

Stuffing ideas-

Steve likes a crab mix. Mix all ingredients together and stuff into a whole fish

Seasoned bread cubes or crumbs
1 can crab meat- use 2 to 3 tablespoons of liquid for moisture in stuffing
Chopped onions, celery, bell pepper.
pinch or two of curry powder
salt and pepper to taste
1 tbs melted butter

I like a vegetable only mix – you can layer the ingrediants or mix and stuff into a whole fish

Spinach leaves- slightly chopped
Grape/cherry tomatoes- halved
Sliced bell pepper,  onions, celery
Baby carrots- quartered lengthwise
2 to 3 small pads of butter- place into fish before other ingredients.
(pretty much any vegetable I happen to have in my vege drawer)

You can use these stuffing ideas with any fresh whole fish. Trout makes a wonderful treat. I do de-bone the trout before I cook it, something my father taught me long ago- being an avid fisherman. It takes a skill to be sure, Steve jokes that he didn't realize trout had bones, I am that good. Get your fish-market to de-bone it for you if you think there will be an issue.

healthy living ~ super drink- cranberry, ginger, nutmeg, cinnamon

A long time ago, I came across a recipe that promoted excellent health values. The ingredients most certainly were healthy. I made the original recipe healthier by using real cranberry juice (unsweetened) and fresh ginger, nutmeg, & cinnamon (original called for the powdered herbs, just mixing with the cranberry “drink” and enjoying.) We all know that fresh is best.

I have also have posted in the past the wonderful benefits of Ginger, so I will not go into that again. Here is a link to that post if you are interested in refreshing the information, or new to Journey.       ginger

I can’t say enough for this beverage. First thing in the morning, I have an 8 oz cup of my super drink, usually putting a tablespoon of ground flax seed as well.  It is excellent for those with diabetes. Please make sure you purchased “unsweentened” cranberry juice. You can tell if it is the right one by reading the lable—ingredients will say--- cranberries & water-- and the sugar content under 7 g.  There are two brands I stick with are R.W. Knudson and L & Ay.

1 32oz jar unsweetened cranberry juice
1 to 1 ½ whole nutmeg seeds - cracked open
1 to 1 ½  whole cinnamon sticks
2 to 3 pieces ginger sliced 1/8” thick, outer peel removed

Place all ingredients into a stainless steel (not aluminum) cooking pot. Bring to a boil, turn off heat, and let steep until cool enough to return ingredients to original juice bottle.  Place the herbs into the bottle with the cranberry juice, refrigerate.  This is a concentrated drink so you will need to blend it with something else before drinking. It can be super puckery straight from the bottle.

Suggestions:  Add 2 - 4 oz to…… and enjoy  
  • 8 or 16 ounces of water- super exercise cool down drink
  • diet 7up with some crushed ice- my favorite cooler.
  • Grapefruit or orange juice- great for breakfast
  • Add to water, add 1-2 tbls. ground flax seed, and have as a wake-up super charger (remember that flax seed speeds the digestion, so do not drink this too close to taking medications or vitamins, hinders absorption.)

lifesaving-Energy-Saver-Mode ~

I am the type of person that generates a lot of energy. No, not hyperactive energy, just a simple get it done energy. This person or that person has told me that without me being around to motivate or help they would not make it through whatever we were doing. Sometimes I become drained, I feel as though everyone is taking my energy and using it leaving me dry, so to speak.  A close friend, when she sees me so drained, struggling just to make it through another day says: oh-oh the “energy vampires” have attacked you again. Partially she is right, but no one takes from me without me allowing it, it isn’t forced. Excuse me, there is one or two who I feel take it by force; still who is in control here. I am.  Recently, I had another attack of the “energy vampires” according to my friend. And when I tried in my exhausted state to put up a “wall” to save what energy I had left- I found that the wall was a wall of anger.

Anger…at whom, at those using my energy; at myself for allowing to be drained? At having to compromise my values/ethics with my daily tasks because of others? At knowing, I was angry and feeling negative feelings and becoming angrier about having to deal with this now---in my (mentally) tired, weakened state. Only my inner self knows for sure the reason that this anger came forth. It has been there before, and I usually am able to settle it down rather quickly. This time it only created a new emotion for me…depression. This is an emotion that I fear, for reasons I wish not to say, but I do. Now I am really in a fix… angry, depressed, and wanting to be alone, totally alone. Because then no one has the opportunity to drain me any further. I had to find a solution. I am getting older, I don’t bounce back as quickly as I use to, I get more tired, and with that, I become more emotional and less intelligent. I can no longer remember the 15 things to-do that I use to, 5 is about it, nor do I want to expel the energy I need to get them all done simultaneously.  

 I was sitting at my computer, after searching the Wild Weird Web for answers and possible help- all of which are things I knew, heard, seen before- when suddenly my monitor turns black and a little window pops up:

“Power-saver mode”

I reach for my mouse, jiggle it a little and the main background screen (which contains a beautiful, serene picture) pops back up. I stare at it and a little while later… "Power Saver Mode" returns.  I laughed aloud- the first I have done for a long time, even smiled, after all the computer searching, soul searching, meditating… my computer monitor gave me my answer.

I don’t have to go-go-go-go all day long, every day!  I only need to spend energy when it is needed for what my purpose is at that moment. If there is another monitor available, then, let it share, if it doesn’t, let the user (persons needing my energy) worry about that. 

Most importantly--- let the users know, in a non-angry, friendly way, I am in “Energy Saver Mode,” and will be in full power as soon as an important need is there.

And, to all who know me, (I know you're use to seeing me go-go-go, however, if I keep that pace up, soon I will be gone) if you see me taking an “uncharacteristic break, sit-down, or can not help you right now I have other things on my list”- I am running on “Energy-Saver-Mode”; if your need is critical, just let me know. ^..^
